I had this last night in a literal Michelin starred restaurant as part of the zero proof beverage pairing. It’s excellent. And it wasn’t just the place I was having it that made it feel high end. It’s delicate and interesting and held up well to the complicated food. Not wine and not tea; existing somewhere both and neither at the same time.
