If you liked mezcal in the before times, I found the fake mezcals are actually better than the fake tequilas — and Monday’s is the best of them. The reason seems obvious in hindsight: smoke survives dealcoholization in a way that agave’s bright, vegetal bite does not, so there’s something real left to taste. You do have to have liked mezcal, though.
